Sweet and Savory Pumpkin Soup!

Fire up the crockpot chickies, this is root vegetable heaven in a bowl, and it's about to become a fast favorite of yours. Everyone in my house from B to T is slurping this soup down. Orange root vegetables are full of fiber, complex carbs, and mood boosting vitamins and minerals that make your skin glow. They're naturally sweet which limits the need for added sugars. The best thing is, you can have fun using whatever root vegetables are available, ripe, local and in season to make this soup. Below you'll see the combo that best suited our palettes. Ingredients

1 cup full fat coconut milk (canned)
2 cups pumpkin purée
3-4 boiled sweet potatoes (I leave the skin on for extra fiber)
2 cups mashed swede (you can cheat and buy fresh mashed swede/turnip. You can sub for butternut squash, or just add both)
1 cup vegetable stock
1 tsp turmeric
1 tsp pumpkin pie spice
1 tsp cinnamon
1 dash sea salt
1 dash allspice
1 dash nutmeg
1 dash ginger
1 wild squirt (I don't know, I guess about 2 tbsp) honey or maple syrup

Serves

4-6

Preperation Time

2-3 hours

Method

Toss all ingredients in your slow cooker and stir to combine. Let it simmer on low for several hours, stirring and tasting regularly, or cook on medium or high if you're in a rush to get dinner underway. Either way your house will be smelling like heaven and you'll have happy, well-fed kids on your hands. My work here is done.
