Sweet Pea Mocha Protein Truffles

Happy Gal-entine's Day! For those of you passing on conversation hearts and Whitman's Samplers this year, I bring you mocha truffles with a surprising main ingredient: pea protein powder. These chocolatey truffles are just the ticket for all the indulgence without an ounce of guilt. If you're looking for a delicious, lactose-free, gluten-free, soy- free way to decrease belly fat and stay full between meals, and recover faster from your workouts, have a go with pea protein. Did I mention they are, um, VERY kid-friendly?

Ingredients

1/2 cup almond flour
1 cup pea protein powder (I use Pulsin' brand)
1 tbsp almond milk
3/4 cup almond butter
1/4 cup date syrup
1/4 cup cacao powder

Optional toppings:
freeze dried raspberry bits
desiccated coconut
dark chocolate shavings
goji berries
cacao nibs

Method

Add pea protein, almond flour and almond milk to food processor, pulse together. Add remaining ingredients until crumbly mixture forms. With wet hands, form small 1 inch balls, coating in your favorite topping before adding to parchment paper. My batch made about 40 balls (my sweet tooth got in the way of a proper count!). These energy balls will stay fresh for days in the fridge or made in large batches for your freezer.
